    Can I use dried thyme?

    Yes — about a third of the fresh amount, and add it with the butter so it has time to soften.

    The garlic is browning too fast.

    Lift the pan off the heat for thirty seconds, then turn it down a notch. The gnocchi can wait — it is still boiling.

    I’m ten minutes behind.

    Then hold the spinach until the gnocchi is nearly done. Everything still lands together, ten minutes later than planned.
